Stuck or Sluggish Ferments

With vintage drawing to a close, we are receiving many calls for advice on dealing with stuck and sluggish ferments. Our Stuck Ferment Protocol can help. Also consider:

There are many different types of sugars, but the ones that are of most interest to winemakers are the fermentable ones: glucose and fructose.  The usual ratio of fructose:glucose  in a fermenting must is 1:1, however if a ferment becomes sluggish or stuck, this ratio increases and the ferment can be difficult to restart without the addition of a fructophilic yeast such as EZ Ferm 44.
