Potentially adverse levels of smoke taint from bush fires can be predicted in juice or wine by measuring the free and bound levels of a number of phenol compounds. Analysis of both the free and bound forms of these taint compounds will give an overall indication of the current and potential problems from exposure to smoke.  Grape growers and winemakers can use the results to assist with harvesting or processing decisions.

    The compounds measured are:

    • guaiacol
    • 4 methyl-guaiacol
    • o-cresol
    • m-cresol
    • p-cresol
    • syringol
    • 4 methyl syringol

The method involves solvent extraction of the taint compounds and quantification by GC-MS. For the Bound fraction the sample undergoes acid hydrolysis prior to analysis.

50 mL of juice or wine is required

Please ensure juice samples are frozen (or lightly sulfured) prior to despatch.

Sending Smoke Taint Samples from USA to Australia

Vintessential Laboratories in Australia is currently accepting juice and wine samples for Smoke Taint testing. Grape samples will not clear through Australian Customs so we recommend sending your samples as juice, via FedEx. This does not guarantee that the samples will clear Australian Customs, but we believe it is your greatest chance of success.

For Australian Quarantine clearance, a Manufacturers Declaration is required. Please include the Manufacturers Declaration (template attached) with your shipping documents.

The following information is provided to help you complete the Manufacturer’s Declaration: A detailed description of the goods. This must state the following:

    1. Origin of goods – animal / plant / microbial/ synthetic (e.g. Plant material)
    2. Composition and end use of goods (e.g.: Grape Juice for the manufacture of wine)

Please provide the Manufacturers Declaration on company letterhead, dated and signed with reference to the FedEx tracking number. The supplier may only furnish this declaration if they are also the manufacturer.

Your commercial invoice should include the sample volume and wine type for each sample.

Please complete the attached ‘New Customer Form’ and email to us, prior to sending your samples. To expedite the process of sending you results, your credit card will be charged prior to the release of the laboratory results.

Juice samples should have sulfur dioxide added and be frozen prior to shipping. Please include ice packs to try to preserve the samples as much as possible. This is not required for finished, stable wine.

Samples must be sent in plastic containers, not glass.
