Rapidase® Rose, 100g
Description
The enzyme to manage rosé wines aroma.
RAPIDASE® Rosé is perfectly suited to any technological winemaking itinerary focused on Rosé wines aroma management. RAPIDASE® Rosé was tested and approved for use on rosé wines in wineries as well as in research institutes.
Application:
1. For rosé wines with fruity or amylic fermentative aroma, the enzyme will be used on must for advanced clarification
2. For tropical or citrus fruits varietal rosé wines, the enzyme will be used in maceration to support thiol precursors extraction. This extraction
continues on must after pressing from the remaining solid particles.
