Rapidase Winemaking Enzymes
DSM's well-known range of Rapidase® enzyme preparations are designed with specific activities perfectly suited to the Winemaking process.
The result of 100 years continuous research & development in the same laboratories used by Louis Pasteur's collaborators.
By using natural strains of aspergillus niger specifically selected for oenological purposes, Rapidase® creates negligible unwanted side activity (for example, the cinnamyl-esterase activity is lower than that of purified enzymes).
Rapidase® limits the formation of volatile phenols, keeping their concentration below the threshold.
